Noted 8.13.23

Things have felt SO busy lately as I am urgently trying to check off all the little last minute wedding to-dos. None of them individually are particularly stressful, it’s the cumulation of them that becomes exhausting. A constant to-do list hanging in the back of ones mind. 

 

I don’t know if I’ve ever done so much online shopping. Not only for clothing & accessories (lots of trying on and returning), but also random travel things like a voltage converter. When I think about the fact that we’re leaving in 2 weeks I feel an absolute panic inside of me, but try to remind myself that the major things are all set. However, wedding planning in combination with trying to furnish & decorate our new apartment (and a full-time job!) is close to sending me over the edge. 

 

On the bright side, weather has been really nice during the day (the fog still heavily rolls in late afternoon) and Drew & I took the opportunity to go for a bike ride. It always feels refreshing to get outside. 

Reading | I just finished Where the Forest Meets the Stars. I’m still on my free trial of Kindle Unlimited, and it was a highly reviewed, free book via that subscription. I’d give it a 7/10. It was an enjoyable read, but I found myself getting bored with it by the end. It was sort of a unique plot, but I didn’t find myself entirely captivated. 

Cooking | I’ve been making simple summer salads as a side dish lately – throwing together mini cucumbers, cherry tomates, red onion, parsley, etc. I’ve been hooked on the dressing I’ve been making with it – it’s a combo from two recipes I saw on Instagram, but made it my own. 

~ Apx ¼ cup olive oil

~ A little less than ¼ cup of red wine vinegar

~ teaspoon dijon

~ salt, pepper 

~ dab minced garlic

~ lemon juice 

Also, this was the first time I’ve ever bought “mini” cucumbers for a salad, instead of just buying the bigger ones – I’m a fan. They are easier to portion when you just want a smaller amount for a salad. 

Listening to | I really loved this podcast episode featuring Bozoma Saint Johns. I was not familiar with her before, but I have listened to other episodes of Diary of a CEO and enjoyed them. So after seeing a clip of the episode on Instagram, I decided to listen. She talked about being selfish (in a good way) and really drove home the message that our lives are our own, and we get one shot at it. If something isn’t fulfilling you, move on from it. The way she talked about not wanting to be at the end of her days feeling unsatisfied with her life really resonated with me. The episode really caused me to reflect.
