I love strawberry bread and am excited that they’re in season again! The recipe I share is one I got from my mom, she’s made it over the years. It’s quite easy and most of the ingredients you probably already have in your pantry. You can also make muffins instead of loaves, or as I did one loaf + muffins.
I’ve tried to make healthier swaps, like using Stevia instead of granulated sugar, using high quality flour.
Strawberry Bread Recipe
Yields: 2 loaves or 1 Loaf/12 muffins
Ingredients:
- 3 cups Flour
- 1 teaspoon salt
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- 2 cups sugar
- 3 eggs – beaten
- 1/2 cup cooking oil
- 1/2 cup applesauce
- 1 1/4 cups chopped pecans
- 1 pint fresh strawberries
1. Preheat oven to 350
2. Combine all dry ingredients in a large bowl.
3. Make a well in the center and add eggs, oil & applesauce. Stir until mixed
4. Stir in strawberries & pecans.
5. Put mixture in lightly greased loaf pans. Bake for 60 minutes, muffins baked for 20-30 minutes.
